Principles of Baking Course

This is a baking course a student enrolls for, in any baking-related skills program and is a required class. The combination of classroom and kitchen outcome  based learning in this course gives students an overview of standard  baking techniques and kitchen practices. Students are introduced to both everyday and specialized baking tools and equipment, commonly used ingredients and their properties. They also learn professional standards of personal hygiene, work station sanitation and general kitchen safety.

Cake Decoration and Design Course

This course focuses on how to bake, fill, ice and decorate cakes. Coursework includes overviews of special occasion and wedding cakes. Students are introduced to a variety of decorating methods using royal icing, marzipan, gum paste and fondant, using air brushing, piping and more. The principles and techniques needed to create tiered cakes are covered in both classroom study and hands-on kitchen learning.

Cake decorators design, construct, and embellish baked goods. Along with expertise in decorating techniques, this career depends highly on creativity and manual dexterity. Cake decorators often work in retail bakeries to create cakes and pastries for all occasions, such as weddings or birthdays. In addition to icing, frosting, or piping these baked goods, common job duties include providing customer service, tracking supply inventory, and maintaining clean work areas. This occupation may become stressful when important deadlines loom.
