The French High Tea with Chef Fabien

Thu Feb 25, 17:00 - Thu Nov 25, 20:00

Creme and Croissant

ABOUT

Four French classics in one evening with Chef Fabien: crème brûlée, île flottante, chocolate mousse and madeleines. Hands-on, 8 seats, everything goes home with you.

Everyone teaches macarons. The French don't make them at home.

At home, the French make crème brûlée, île flottante, mousse au chocolat and madeleines. The four desserts every French family knows by heart, and the four you will master in one evening.

YOUR CHEF

Chef Fabien Huchet trained at Lenôtre and Ferrandi in Paris. He has worked the pastry kitchens of Le Meurice, Shangri-La Paris and Le Royal Monceau Raffles, and at Céleste at The Lanesborough in London: the hotels where tea time is an institution.

WHAT YOU WILL MAKE

Crème brûlée: a silky vanilla custard and the perfect glass-thin caramel crack.

Île flottante: poached meringue clouds on crème anglaise with a golden caramel.

Chocolate mousse: light, deep and made the French way.

Madeleines: the shell shape, the hump, the brown butter.

HOW THE EVENING RUNS

We start at 17:00. Three hours, hands-on at your own station. At 19:30 we sit down together for the high tea: île flottante and Dilmah tea. You leave with a box of everything you made.
