The baguette is one of the most technically demanding breads in the world. In this class, you master it. You mix, fold, score, and shape your own baguettes entirely from scratch using the poolish method, guided by Chef Serena Obadia in her Cape Town kitchen.

You will learn the hand mixing technique, master hand shaping, understand the science of the poolish, and score, bake, and finish your own baguettes from start to finish. This is the real technique.
