Marmalade the unconventional way!


Join us for an exploration of marmalade for the modern, considered person.


This workshop is based on the Redbushed technique pioneered by South African food innovator Andre Strydom. Using the method from his book The Sweet without the Sugar, we’ll learn how to make our own marmalade that is free from refined sugars and pectin with just two simple ingredients.

This technique is perfect for our busy lifestyles offering a quick, easy and convenient way to make marmalade. It requires no boiling pots, hours in the kitchen or endless testing, offering skill that is easy to do at home while keeping you in control of the ingredients. If you are curious to learn how to simplify life while still keeping it sweet, then this workshop is for you.


The citrus used in the workshop comes from our farm, so it is organic, pesticide and wax free, ensuring you have a clean product to take home. This is a fun day in nature exploring not only the technique, but also the land where our food comes from. Ideal for food and nature lovers, home cooks, chefs, recipe developers, caterers and or anyone who wants to learn something new and expand their culinary repertoire. Just come as you are with a curiosity to learn. This workshop and may be suitable for children who are interested in cooking and agriculture.


Our day begins with an introduction to the technique followed by a hands-on making experience where you will craft your own batch to take home. We’ll close the day with a citrus inspired lunch under the trees. All ingredients will and equipment will be supplied.


Workshop details

11:00am Arrival. Botanical teas and snacks served, follwed by a farm tour

12:00pm Introduction to the technique with a taste test

12:30pm Hands-on making

13:30pm Lunch under the trees

14:30pm Close
