Two mornings. The most iconic techniques in French pastry. All made by you.
This is not a class where you watch someone else pipe, fill and glaze while you take notes. You will stand at your own dedicated station and execute every single recipe yourself — from the dough, to the cream, to the final glaze. You leave with the skills, and you leave with the food.
Over two intensive mornings, you will master the full choux pastry universe and the art of sweet dough — the backbone of French pâtisserie:
Choux Buns Tower — Wedding Cake Style
The showpiece. A dramatic stacked tower of choux buns filled with a classic vanilla pastry cream. This is the kind of centrepiece that makes a room go quiet.
Saint-Honoré Tart
Choux meets tart in one of the most celebrated and technically demanding classics in French pastry. Sweet dough base, choux buns, and the iconic Saint-Honoré cream — all made by your hands.
Chocolate Éclair with Chocolate Crémeux & Mirror Glaze
The éclair, perfected. A crisp, even choux shell filled with a rich, silky chocolate crémeux and finished with a flawless mirror glaze that you will mix, temper and apply yourself.
Every single technique you learn here is a foundation. Master these, and the rest of French pastry opens up.
This class is happening at Baked Academy — a professional, halal-certified kitchen in Johannesburg — and it is scheduled once. There is no second edition planned. Every student works at their own station, which means spaces are strictly capped. When it's full, it's full.
