WILD FOOD WEEKEND WORKSHOP

25 & 26 July

11am - 5pm


Held in the Veld and Sea Glasshouse, kitchen cabin and surrounding cultivated gardens and fynbos mountainside. Join Roushanna Gray and the Veld and Sea team on this multi day workshop that will empower you with the skills and confidence to further your connection to your food, the seasons and cycles of nature through this immersive learning experience. Discover how to use local edible plants, wild herbs, backyard weeds and edible flowers as an everyday kitchen staple and how to plant, prepare and preserve moments of time for your wild pantry.


Enjoy welcome snacks and wild herbal tea, an introduction to the art of sustainable foraging, wild flavours and fire cooking. You will be guided on a foraging walk in search of a selection of wild and seasonal ingredients from the mountainside, farm and gardens that we will use in our weekend meals and creations.


DAY 1 – IMMERSIVE PLANT STUDY

· Intro, sustainability, plant and land relationships, flavour seasons and cycles

· Garden and mountain walk, forage and harvest session

· Plant identification

· Lunch, solo walks and journalling in nature

· Group discussion, plant processing, tea and cake


DAY 2 – PRACTICAL KITCHEN APPLICATION

· Recipe creations and cooking demos

· Culinary applications and medicinal properties of the plants harvested

· Lunch, solo nature immersion/plant study/harvesting walks

· Tincture making

· Wild library, dessert and farewell


Recipes and demos include:

· Fire cider

· Tincture making

· Wild greens pesto

· Infused ricotta

· Herb, seaweed and floral salts

· Winter greens fire flatbread

A basket and secateurs/scissors
