Asado Rum Sparkle
A refreshing bright citrus spritz made with cold-brewed tea, Krush orange, fresh lemon & orange juice, mint and sparkling water.
Served with or without rum.
Light, herbal, summery — the perfect start to a fire feast.
THE MENU
STARTERS (from the fire)
The Melting Wheel
Cast-iron melted Camembert with fresh ciabatta, table grapes, honey and butter — rustic, gooey and decadent.
Embered Pâté
Smooth chicken liver pâté, lightly smoked by the fire, served with warm garlic & herb flatbreads from the pizza oven.
MAIN FEAST (live-fire cooking)
The Not-So-Holy Lamb — Whole Lamb on the Spit
Slow-roasted on the spit for hours, basted with garlic, herbs and rosemary. Carved directly from the spit for service.
Pig ’n Pineapple — Hanging Pork Legs
Pork legs suspended above the fire pit, glazed with burnt pineapple, local honey and citrus.
The Rosemary Redemption — Whole Chickens
Stuffed with lemons and herbs, butter under the skin, smoked over wood embers until golden.
The Coastal Pot Returns — Fire Mussel Pot
Cast-iron mussel pot cooked with garlic, herbs, and white wine — a coastal Asado twist.
SIDES (served family-style)
Fire Potatoes
Crispy smashed potatoes roasted in aromatic ghee with confit garlic.
Smoked Cabbage Salad
Charred cabbage, burnt citrus dressing, herbs, dukkah crunch.
Coal-Roasted Pumpkin
Pumpkin roasted in the coals with burnt honey & balsamic, feta, toasted seeds & rocket.
DESSERTS (from the coals)
The Embered Pear
Pears roasted on the fire until caramelised.
The Fire Crumble
Cinnamon-spiced crumble layered over dulce de leche.
KIDS 12 AND UNDER - not seated inside Boma - seated outside Boma at kids table by Jumping Castle
